This beautiful starter comes from a gorgeous 5 star resort in Akumal Mexico, which is on the Yucatan Peninsula. Created by a master chef and kept in a climate controlled area it is used to feed hundreds daily. I was fortunate to find a starter from Mexico as sourdough is not as common there in the baking world.
I am not sure if this starter has travelled internationally before , but I was able to secure this wonderful Masa Madre as a gift from the chef. I flew it back home with me and have begun the process of activating this viviacious starter. Bubbly, strong and very resilient but with such a smooth flavor it is a wonderful starter to work with and has made gorgeous breads.
